Lack of or inadequate amounts of these important nutrients have consequences on children.Inadequate amounts of fiber cause constipation and obesity. Children will have fewer movements of bowel and the stools are hard and dry when they are constipated. Fiber reduces chances of obesity since it contributes to satiety. The best way for children to get enough vitamins and minerals is by eating a wide variety of fresh foods. Vitamin B12 deficiency can lead to a form of anemia as well as delayed speech. Conditions such as atrophic gastritis, where the stomach lining thin can also be associated with B12 deficiency (Baumgartner, 2012). On the other hand Vitamin B1 deficiency may cause nervous breakdown and weal muscles. Children need B1 to strength muscles and make sure the nervou s system works well. Vitamin D deficiency causes rickets as a result of soft bones or skeletal deforminities.Minerals are also important in children health and development. Iodine deficiency may result to mental retardation in children while zinc deficiency causes increased rates of diarrhea, malaria and pneumonia.
